Ingredients

  • 4 small boneless skinless chicken breasts (or 2 large breasts cut in half lengthwise)
  • Salt and pepper
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 3/4 cup chicken broth
  • 1 cup Old Home Chive & Onion Sour Cream Chip Dip & Topper
  • Chopped chives, for garnish
  • Mashed potatoes, for serving

Directions

  1. Season both sides of the chicken with salt and pepper.
  2. Heat a large skillet over medium heat with 1 tablespoon each butter and olive oil.
  3. Once hot, add the chicken and cook until the internal temperature reaches 165 degrees F, about 5-8 minutes per side (time will vary depending on the thickness of the chicken).
  4. Remove the chicken from the skillet and set aside on a plate.
  5. Reduce heat to medium-low. Add the remaining tablespoon of butter and the diced onion. Cook for 8-10 minutes until softened.
  6. Slowly pour in the chicken broth. Let it simmer to deglaze the skillet, scraping any browned bits off the bottom, then whisk in Old Home Chive & Onion Sour Cream Chip Dip & Topper.
  7. Add the chicken back to the skillet. Let the sauce lightly simmer for a few minutes.
  8. Serve the chicken and sauce over mashed potatoes and garnish with chopped chives.
